To make this recipe you will need a head of cauliflower, a can of full fat coconut milk, and unrefined coconut oil.

A couple of things to note here. First, make sure the coconut oil is unrefined. Refined coconut oil strips away all of the scent and flavor of the coconut.

Also, use full fat, high quality coconut milk. Unfortunately, not all canned coconut milk is created equal. Thai Kitchens and A Taste Of Thai coconut milks are the best I’ve tried, so far.

This first step is to rice the cauliflower, if needed.

Heat the coconut oil in a large skillet over medium heat.

Once melted and hot, add the cauliflower rice. Cook, stirring frequently, for about 5-7 minutes or until the cauliflower rice is tender.

Stir in the coconut milk and cook another minute or two until heated through. You can add extra coconut milk, if desired.

Tip: you will have extra coconut milk. You can freeze the extra or store it in the refrigerator and use it in coffee, tea, smoothies, or other recipes.
